what is hurdle technology?

Hurdle technology is nothing but a a method of preservation which involves a number of cheical methods in it. It is used to kill microorganisms.

  1. Microorganisms which cannot able to tolerate all kinds of hurdles such as temperature , pH, humidity, water activity, microbial sterility etc…..
  2. this method is one of the best methods to prevent spoilage of food during processing 
  3. on processing many food items get damaged due to microbial contamination the method is to inactivate or even kill the microorganisms by adding preservatives or hurdles that disturbes the homeostasis of microorganisms.
  4. it is a non thermal food processing method.

for example,

pasteurisation: it is a processing method of milk where both heatings, as well as cooling, occurs and the main thing to be noted is the temperature and of course the microbial sterility gets disturbed.
